I am keen in educating myself bout foraging. So recently I have been looking for books about foraging but i can't seem to find any online e-books nor any sold in Singapore. This video features a group of elite chefs whom gathered to forage for a dinner organised and for invited guests only. To me the person with the best knowledge on foraging is René Redzepi.
Rene Redzepi is co-owner and chef of Noma in Copenhagen, Denmark, Best Restaurant of The World's 50 Best Restaurants [http://www.theworlds50best.com/] in 2012. He forage produce for his restaurant in the area. In foraging, you have to have a wide knowledge of food or you may end up in the hospital or worse, dead. One of the well known chefs that i know included in this video is Claude Bosi whom currently holds 2 michelin stars (same as Noma) at his restaurant Hibiscus in London.
One thing about foraging is you do not have to pay. On top of that you are exposed to more exotic ingredients that are not available on the market. These ingredients are often not cultivated and has very unique and different flavors. I would love to post a more detailed page of information about foraging but I have not read up enough.
One of the most commonly foraged ingredient is mushroom which is also the most dangerous because quite a lot of them in the wild are poisonous and you don't know which you pop into your mouth might send you into the toilet for a few days and even to death in serious cases. The last video that I am going to share in this post features a local chef, born in Taiwan and moved to France at the age of 15 and trained there. Yes, he is André Chiang of Restaurant Andre in Singapore. However, this video touches on sustainability which is the topic of one of my previous posts. You never know what precious and delicious ingredients, plants, vegetables and fruits you burn down with the trees just for land. Not forgetting the meat, from animals and also, animals that we do not eat. Again, let me emphasize on sustainability. Have you ever experienced coming back home only to find out that someone burnt down your home? A lot of animals have become extinct from this cause so, stop burning of forests and learn to enjoy the things in nature.
Foraging is described as "shopping in the forest" and funny things you hear when foraging with people are "can we eat this" and if it's too late, you will hear "oh shit!" I certainly see myself supporting the people who are already in the process of campaigning sustainability and protecting the innocent animals who are driven to extinction.
