Another ingredient I have fallen in love with. Looks similar to Hay-bi-hiam what he call in Hokkien for dried shrimp but it's not! The price of it is more expensive than... prime beef cuts, abalone and shark fin! (If I'm not wrong) Sakura Ebi also known as cherry shrimps are widely known to come from the Shizuoka prefecture in Japan, otherwise Taiwan is the only place that cultivates this freaking delish shrimp. Warning: it's addictive. Can be eaten raw, but taste better after being pan-fried. THIS is as valuable in Japan. Remember everything that comes from Japan is expensive? Sakura ebi are actually auctioned at the harbours! It's no wonder it's so expensive in Singapore. It goes pretty damn well with pastas, if you have an opportunity to try one, jump on it. There are fresh ones, dried ones and frozen ones. Preference ranked fresh ones(of course right), followed by frozen then dried. If you have the $$ buy some and put some in your seafood pastas, it will be one of the best you've tasted.
