Finally managed to invite this guest that hasn't been able to make it till now.. Cooked truffled mushroom risotto and some dry-aged beef tenderloin with pomme puree, asparagus, cep puree, shimeiji, baby king oyster, caramelized onions and a mushroom-redwine reduction. The sauce was what I was most happy with.
