Skills Test by Chef Monica Galetti, Senior Sous Chef at Le Gavroche. Just sharing some videos here, nothing much. But these are really really really and REALLY important skills as a chef. Can't expect people to do it for you can you? You not only have to know how, you have to do it fast to save time, and clean to prevent any wastage and produce maximum yield from the produce.

Opening a wing
Joint a Chicken
2 ways of preparing a roasted chicken. Depends on which you prefer. But I would go with Thomas Keller's. There's a reason why Thomas Keller has 2 [3 michelin star] restaurant and Heston does not. No offence, it's a fact. But, if you have the time, you can follow Heston's way. The results show in the video that it's better. But compare the time need, do you really have that kind of time? CORRECT?
Prawns [You can butterfly it, another way i learnt, is if you are not keeping the head, don't cut it, twist it off, if you're good, that intestine will be hanging out. You just have to grab hold of it and pull it slowly or it will snap. If you fail, you'll have to butterfly it. This method is if you want to keep the prawns shape.]
Preparing Seafood & 1 reason to love Tagliatelle
Making Fresh Pasta
Agnolotti [Watch from 17:25]
Gnocchi [Gennaro and not Jamie because it's Jamie's name on the restaurant that I did not enjoy my favorite Bolognese even though both of them are partners of the restaurant] Don't be mistaken, I still respect both of them a lot because they have went through and achieved what I have not. It's just that bad experience that ruined my impression of Jamie.
Taglietelle [My favourite. Reason: You only need a pasta machine, not the cutter & it's a preferred texture for me]
What is pasta machine? Look at how they make the dough for Har Gao!
I'll post all these for now! I spent hours watching these videos in the past. And now i spent another few hours remembering and gathering these videos to share with you readers! You don't have to find them, it's all here. There's definitely more, I need time to recall.. Cheers!
